St. Patrick's Day Cupcakes!

Today I attempted some St. Patrick's Day cupcakes that I had pinned a few days ago (find me on Pinterest here!).  I did change several things about the recipe but I'm very proud and happy with how they turned out!  The exact recipe I worked from was by Love in the Oven, but here's what I did.

2 1/2 cups plain flour
2 cups caster sugar
1 tablespoon cocoa powder
1 teaspoon salt
1 teaspoon bicarbonate of soda
2 eggs
1 cup vegetable oil
1 cup buttermilk
1 tablespoon white vinegar
1 teaspoon vanilla essence
1 bottle Goodall's green food colouring (yes, the whole bottle!)

Preheat the oven to 175 degrees Celsius (350 Fahrenheit).  Line your muffin tins with 18 gold foil cases.

Lightly beat the eggs in a medium bowl with a hand whisk.  Add in the remaining liquid ingredients, whisking until they're all combined.

In a large bowl, combine all the dry ingredients with a wooden spoon/spatula.  

Add wet to dry, stirring until it all forms a goopy slime green cake looks really crazy and weird at this point!

Pour the batter into the cases.  I did about two dessert spoons per case and used my hot water tip, alternating between two spoons and dipping them back into a cup of boiling water. (I learned this at Home Economics class in school!)  

The mix should fill about 18 regular cupcake cases.  Bake in the oven for 16 minutes, or until they feel springy to the touch and a fork or toothpick comes out clean.

Let cool for 10-15 minutes, then transfer to a wire rack.

For the frosting
I used one 225g pack of original Philadelphia cream cheese, 1 and 1/2 350g bags of icing sugar and 1 teaspoon of vanilla essence.  I beat it all together with an electric hand mixer until I got the right consistency (not too runny, not too stiff).  

If you're fancy, you can pipe your frosting onto the fully cooled cupcakes...I just used a spoon :)  Then sprinkle with green edible glitter and enjoy!

Let me know if you do try these, they're quite delicious!  I gave half the batch to my mom & sisters and Jonathan & I will probably devour the other 9 before Paddy's Day even arrives...ha ha ha!
